Elderberry extract inhibits several strains of influenza viruses and
hastens recovery from the flu. You can find commercially prepared elderberry extract, or you can make your own tasty syrup.
6 cups fresh elderberries, or dried elderberries that have been soaked in water until plump
1/3 cup honey
1/2 teaspoon powdered ginger, or 1 teaspoon fresh, grated ginger
1/4 teaspoon powdered cinnamon
1 Tablespoon lime juice
2 cups vodka
Wash the elderberries, mash them and juice them through a strainer.
In a quart pan, mix the elderberry juice with the honey, ginger and cinnamon. Cover and simmer for 35 minutes. Remove from the heat. Add the lime juice and vodka. Pour into a bottle, cap and store in the refrigerator for up to a year. At the first sign of flu symptoms, take 4 Tablespoon a day.
Makes 2 1/2 cups

Echinacea may not be the best choice for helping your kids beat a cold. A recent study revealed that the herb was largely ineffective for children between 2 to 11 years old. It worked no better than a placebo remedy. Extra rest, lots of liquids, and over-the-counter cold medications for children may help provide relief until the cold runs its course.
